Greekalicious cooking classes – talk, taste, cook, eat – food cooked with love and harmony

Join Greekalicious’ Maria Benardis as she takes food lovers on an exploration of ancient, regional and island Greek cuisine. Discover ingredients and dishes unique to particular parts of Greece with Maria’s own interpretation and flair. Accompanied with Greek wine, she will treat taste buds to the most sensuous Greek experience and provide lively storytelling that will reveal the history, wisdom and culture of Greek cuisine as it has never been told before.

 

Price: $125 (includes taxes, booking fees, organic ingredients/food, wine, recipes, hands on cooking, health and food wisdom, fun and story-telling)

We use certified organic ingredients wherever possible and ingredients that are GMO-free. We also use authentic ingredients from Greece to heighten the experience and energy. 

We use certified Greek organic extra virgin olive oil from Greece the origins of olive oil making in all our cooking and not the unhealthy cotton seed, canola, soy and vegetable oils that many other eating establishments use. 

We strive to be and to provide the best quality dinner experience when it comes to the use of quality ingredients, and service.  

Above all we practice an Ancient Greek tradition of cooking with “agapi” (Unconditional Love) and harmony. We cook all our dishes adopting the healing Ancient Greek wisdoms and philosophies that lead to harmonious health, energy and longevity.

Wednesday 30th March at 6.00pm – Intuitive Greek cooking class – Travels to Greece – Crete the island of longevity

In this class we take a journey to Crete origin of the longevity and Mediterranean diet. Crete is home to the superior Minoan civilization, olive oil and much more. Discover why the Cretan cuisine endows people with longevity and sound health. Dishes will include dakos (barley rusk with tomatoes and feta) (Veg), bougatsa (filo custard pie with honey and cinnamon (Veg), fried wild green & feta filo pies (Veg), and slow baked Greek style lamb with potatoes and tzatziki (GF).

Wednesday April 6th at 6.00pm – Intuitive Greek organic cooking class – Travels to Greece – The Cyclades Islands (Mykonos & Santorini)

You are all familiar with the rich blue and white images of the Greek Islands. Match the food to the imagery, with ingredients and dishes from Mykonos, Santorini and Tinos. We will discover the key ingredients used on these islands and how they are used in sweet and savory dishes. Dishes will include the caramelized onion filo pies of Mykonos (Veg), Cyclades prawn saganaki with feta, tomatoes and fresh herbs (GF), Salad of Santorini (Veg/GF), and seasonal fruit poached in Mavrodaphne (Greek sweet wine) with Petimezi whipped cream and pistachios (Veg/GF).

Wednesday April 27th at 6.00pm – Intuitive Greek organic cooking class – Ancient Greek Banquet Ancient Greek dishes & ingredients explored

There are many ancient Greek dishes and ingredients that are still enjoyed in Greek households today and some that time has forgotten. We explore some of these dishes and ingredients and put a modern interpretation on some. Dishes will include Tirokafteri (spicy feta dip) with pita bread (we will make fresh pita bread) (V), Hellenic Lamb Filo Pies, and Zesty Green, Cucumber, Pomegranate, and Pear salad with an ancient Greek salad dressing (Veg).

Monday May 23 at 6.00pm – Intuitive Greek organic cooking class – A Greek Island Seafood Odyssey

You are all familiar with the rich blue and white images of the Greek Islands. Match the food to the imagery, with ingredients and dishes. We will explore some of the seafood dishes enjoyed on the Greek islands with a Greekalicious twist. Dishes will include Fennel, lemon and cumin crusted Swordfish souvlaki (GF), Cumin dusted deep fried calamari (GF), Maroulosalata (Greek lettuce, green onion and dill salad with ladolemono) (Veg/Veg/GF) and Bakalava with honeyed yoghurt (GF).

Thursday June 9th at 6.00pm – Intuitive Greek organic cooking class – Ancient Greek Wisdom for Your kitchen – cooking with the senses

Learn the tools, wisdoms and know-how to cook using your senses the Ancient Greek way. After learning and practicing these new skills participants will apply these and cook their own individual recipe. Dishes will include individually made Greek inspired filo pies using seasonal ingredients, Traditional Greek Horiatiki salad (“Greek salad”) (Veg/GF), lamb and haloumi souvlaki (GF) and Loukoumades (Greek doughnuts) with honey, cinnamon and walnuts (Veg/V).

We will create a scrumptious Greek Summer Feast. The dishes that have being around for hundreds of years because they are just irresistible. You will learn how to work with seasonal ingredients to create a wonderful evening spread that will impress their guests Dishes will include Vegetarian “Gemista” Greek stuffed vegetable with rice, pine nuts, and herbs (Veg,V,GF), Tzatziki (Veg, GF), Melitzanosalata (Eggplant Dip) (Veg, V, GF) with pita bread and Greek cheese filo pies (Veg).
