“Tiro’ is derived from the Greek word tiri (cheese) and kafteri means hot, so essentially tirokafteri means a hot cheese. Traditionally it is made with feta and hot peppers or chillies, but my version has a few extras.
Ingredients
250 g greek feta cubed
1 tablespoon Greek yoghurt
1 tablespoon extra virgin olive oil
1 clove garlic, crushed
½ teaspoon dried wild oregano
1–2 small fresh chillies, seeded and fi nely chopped
Handful of basil leaves
2 spring onions, chopped
Cracked pepper
How to make Torikafteri
Place all the ingredients in a blender and mix well until the mixture is smooth.
Serve as part of a meze plate or with crusty bread.
